Steamed Rice With Coconut and Lemon |

Yummy, lemony rice. This is a great base for spicy dishes. Ingredients:
2 cups jasmine rice, rinsed until the water runs almost clear (2-3 times) |
2 1/2 cups stock or 2 1/2 cups water |
1 teaspoon salt |
1 (14 ounce) can coconut milk |

Directions:
1. In a pot with a tight-fitting lid (or rice cooker) combine all ingredients. 2. Bring to a boil over medium-high heat, cooking uncovered; stir occasionally. 3. When rice boils, cover pot and reduce heat to low. 4. Cook for 15 minutes. 5. Remove from heat and let sit with lid on for 10 minutes. |
