Another one of my mom's Black Box recipes, though the card is written in my grandmother's hand. I have no idea if my mom ever made it. This is rich cake, filled with butter, eggs, milk and honey, and it fills three 14-oz cans, about 6 slices each. Ingredients:
2 cups sifted cake flour |
1 tbsp baking powder |
1/2 tsp salt |
3/4 cup whole milk |
2 eggs |
1 tbsp grated lemon zest |
1/2 cup honey |
1/4 cup melted butter |
1/3 cup poppy seeds |
Directions:
1. Grease three 14-oz cans and put a large kettle of water on to boil. 2. Sift flour, baking powder and salt into a bowl. 3. Beat together milk, eggs, zest, honey, butter and poppy seeds. 4. Pour mixture into dry ingredients, beat well. 5. Fill cans 3/4 the way full and cover tightly with foil. 6. Set on a rack in a large pot., and pour boiling water 1/3 of the way up the cans. 7. Bring water back up to a gentle boil, cover pot and steam 2 hours. 8. Cool 10 minutes in cans before turning out onto a rack to cool completely. |
