Okay folks, here is my version of banana bread done in my pressure cooker.Very moist and lovely texture. Although I did not buy a pressure cooker to bake or make desserts, it's just a challenge and curiosity on my part to see how this appliance can make life a bit easier. Read more . I used an 8 x 4 inch loaf pan which fit nicely into the pressure cooker insert pan. You can see my other posts for steamed lemon poppy seed cake, and steamed chocolate fudge cake. Searching the Net there are indeed many other cake and quick bread pressure cooker recipes which one can adapt with practice to their electric pressure cooker. Well this is it for a while on desserts in my pressure cooker. Just wanted to let you know the steamed cakes and loaves don't brown so one needs a glaze, topping, icing etc to keep the product moist and also remember keep them well wrapped. Ingredients:
1/3 cup butter softened |
3/4 cup white granulated sugar |
1 large egg room temp. |
1 tsp vanilla |
2 ripe bananas mashed |
1 1/2 cup flour |
1 tsp baking powder |
1/2 tsp baking soda |
dash salt |
1/3 cup buttermilk or soured milk |
glaze |
chocolate chips melted with some heavy cream |
Directions:
1. Note: this recipe is for an electric pressure cooker and after making several baked goods I am finding out one only needs about 2 cups of water to create cake like textures, and more water for more pudding like textures. 2. Cream sugar and butter well. 3. Beat in vanilla and egg well 4. Beat in the mashed/puree bananas 5. Combine the flour, baking powder, baking soda and salt 6. Add the dry ingredients along with the buttermilk and blend mixture well. 7. Pour into a greased and floured 8 x 4 loaf pan. 8. Batter should be half full but never more than 2/3 full 9. Seal top of loaf pan with buttered foil 10. Place a wire rack in the bottom of the cooker pan 11. Add 2 cups water 12. Place the prepared loaf on the wire rack 13. Pressure cooker 30 minutes and let steam dissipate natural ( don't open exhaust ) 14. Remove loaf pan from cooker with tongs 15. Place on a rack 16. Remove the foil 17. Let cool to warm and carefully remove from pan, placing upright on serving plate ( Loaf will feel very soft as does steamed cakes) 18. Glaze as desired 19. Slice when cool 20. Wrap well to store and as with banana breads, flavor improves with age. |
