Steamed Asparagus & Mushrooms

This is a delicious low calorie recipe that is suitable for all ages. Pair with Broiled Salmon or Fish and a glass of red wine.
Ingredients:
1 lb. asparagus spears, cut into 1 pieces
1 t no-salt-added vegetable broth
4 c mushrooms, thinly sliced
1/2 c onion, chopped
1 t garlic, minced
1/4 c fresh lemon juice
2-4 t flaxseed or olive oil
Directions:
1. Prepare fresh asparagus by bending the stalk until it snaps.
2. Discard the bottom half and slice the rest on the diagonal.
3. Steam the asparagus for about 5-6 minutes until crisp but tender, set aside.
4. Heat the broth, mushrooms, onion, and garlic in a nonstick skillet, cooking until soft.
5. Add the asparagus, and drizzle with lemon juice.
6. Heat the asparagus through over low-medium heat.
7. Remove from the skillet to a serving platter and allow to cool.
8. Drizzle 1/2 to 1 T flaxseed oil over each serving at room temperature.
