Steamed Acorn Squash with Lime and Scallion |

Can be prepared in 45 minutes or less. Ingredients:
1 small acorn squash |
2 teaspoons fresh lime juice |
1 tablespoon extra-virgin olive oil |
1 scallion, chopped fine |
Directions:
1. Halve squash lengthwise and discard seeds and strings. Using outer ridges as a guide, cut squash lengthwise into sections. Arrange squash on a steamer rack in a saucepan and steam over boiling water, covered, until tender, about 15 minutes. 2. While squash is steaming, in a bowl whisk together lime juice, oil, and salt and pepper to taste. 3. On a platter drizzle squash with dressing and sprinkle with scallion. |
