Steakhouse Style Creamed Spinach |

From Bob Blumer comes this very easy but delcious spin on restaurant style creamed spinach, No roux here, dish is thicked with the Boursin cheese Ingredients:
2 tbs olive oil |
1 shallot minced |
1 lb. frozen spinach thawed |
1/4 cup half and half or cream |
2 1/2 oz boursin cheese at room temp |
salt, pepper, nutmeg to taste |
Directions:
1. Squeeze out excess liquid from thawed spinach 2. Saute the shallot in olive oil a minute or two over med-high heat 3. Add spinach and stir to heat 4. Add cream and Boursin. 5. cook and stir about 3 minutes or until cheese is reduced and mixture is thick 6. season to taste |
