Steakhouse Fajitas From Peerless Restaurant |

Peerless is a fabulous restaurant in West Knoxville, (one in Johnson City, too). Steaks will absolutely MELT in your mouth! Saw the chef present this on local news the other day. I've had it, and it's fabulous! Read more ! One serving at the restaurant, but it would be two servings at home, I think. Ingredients:
ny strip steak, black angus |
1 texas sweet onion, large, cut into pedals |
1 roasted red pepper, cut into strips |
1 fresh tomato, large, sliced (reserve small slice and chop into guacamole) |
1/2 cup white corn or fresh corn |
chopped garlic |
fresh avocado |
lime |
creme fresh or mayo |
2 t. olive oil or corn oil |
mexican spices: (a few light shakes of each) |
oregano |
chili powder |
cumin |
peerless' gk steak seasoning |
salt & fresh ground black pepper |
fresh cilantro |
fresh squeezed lime juice |
sour cream, shredded cheese |
white corn or flour tortillas |
Directions:
1. GUACAMOLE: 2. Prep avocado then mash with a fork, add a squeeze of lime, salt, pepper, creme fresh or mayo, and a pinch of fresh chopped cilantro. 3. STEAK FAJITAS 4. Your saute pan should be HOT with a couple oz. of corn oil or olive oil. 5. Grill steak to Medium Rare. 6. Meanwhile, while steak is cooking, pan sauté onions, peppers, tomatoes, and corn all at once- add salt and pepper to taste. Caramelize your veggies but do not overcook. 7. Finish steak, seasoning it generously with the mexican spices. 8. Cut steak on bias. 9. Place steak on top of Veggies and serve in skillet, with 1/2 a fresh lime on top of final dish. 10. May add sour cream and cheddar cheese if desired. 11. Serve with warm or lightly grilled white corn tortillas |
