I have not tried this recipe. I got this recipe from Real Simple magazine. Ingredients:
1 lb flank steak, thinly sliced against the grain |
1 onion, thinly sliced |
2 bell peppers, seeded and thinly sliced |
1 jalapeno, seeded and thinly sliced (optional) |
1 teaspoon chili powder |
1 teaspoon hot sauce |
kosher salt |
4 teaspoons olive oil |
8 flour tortillas, warmed (8-inch) |
salsa, store bought fresh refrigeratorated (optional) |
sour cream (optional) |
Directions:
1. Freeze It:. 2. In a bowl, combine steak, onion, peppers, jalapeno, chili powder, hot sauce, and 3/4 teaspoon salt. Divide evenly among 4 - 1 quart freezer bags. Freeze until ready to cook, up to 3 months. 3. Cook It:. 4. In a skillet, over medium heat, heat oil (1 teaspoon per serving) empty frozen mix (1 bag per serving) cook, covered, 10 mniutes. Heat medium-high uncovered 2-6 minutes till veggies and steak are cooked. Serve with tortillas, salsa, and sour cream if desired. |
