This recipe is courtesy of Omaha Steaks. Makes an easy and elegant dinner for two. Ingredients:
2 (6 ounce) filet mignon, thawed |
1/8 teaspoon salt |
1/8 teaspoon ground pepper |
2 tablespoons butter |
1 teaspoon dijon-style mustard |
1 tablespoon shallot, minced |
1 tablespoon lemon juice |
1 1/2 teaspoons worcestershire sauce |
1 tablespoon fresh chives, minced |
1 teaspoon brandy |
1 tablespoon fresh parsley, minced |
Directions:
1. Mix the salt and pepper together and rub into both sides of the steaks. 2. Melt 1 tablespoon of butter in a heavy skillet; add mustard and shallots and saute over medium heat for 1 minute. 3. Add the steaks and cook approximately 3 minutes per side for medium-rare. 4. Remove meat to serving plater and keep warm. 5. To the pan drippings add 1 tablespoon butter, lemon juice, Worcestershire sauce and chives; cook for 2 minutes,. 6. Add the brandy and pour sauce over steaks. 7. Sprinkle the chopped parsley over the top and serve immediately. |
