This hearty soup is the perfect meal for a cold winter day! Ingredients:
4 tbl vegetable oil, divided |
1 lb sirloin steak, cut into bite sized pieces |
1-1/4 tsp salt, divided |
1 onion, chopped |
2-3 cups water, divided |
3 baking potatoes, peeled and cubed |
1/2 lb green beans |
4 cups chicken broth |
2 tsp worcestershire sauce |
1/4 tsp pepper |
Directions:
1. In large saucepot, add 2 Tbl vegetable oil. Over medium high heat, cook half the steak pieces for 2-3 minutes, or until browned. Remove ateak with slotted spoon leaving oil in pan. Add one more Tbl oil, and brown remaining steak pieces. Remove steak. Sprinkle steak with 1/4 tsp salt, toss lightly. Add remaining Tbl oil to pot. Reduce heat to low, add onion, cook until translucent, approximately 5-6 minutes. Add 2 cups water, stirring to mix with oil and onion. Reduce heat to low, add steak pieces, potatoes, green beans, chicken broth, 1 tsp salt, and pepper. Cook over low heat 15-20 minutes, stirring occasionally.
