A wonderful mixture of shellfish, creamy sauce and the tartness of tomatoes
Ingredients:
1 tomato for 1 serving
sufficient prawns, called in the usa 'shrimps' for each serving
milk, cornflour, butter and some dry white wine - enough to make a white sauce for however many tomatoes you're using.
some lemon butter for grilling the prawns.
Directions:
1. Cut the top 1/3 off the tomato and scoop out the pips and flesh. Discard the piece you've cut off. BTW - save what you've scooped out and cut off in the freezer to use in soups or stews. Clean and shell the prawns, then lightly grill them in a lemon butter. Add the cooked prawns to your white sauce and fill the cavities in the tomatoes. Add 1 prawn hanging off from the top of each tomato. Put under a very hot grill for 30 seconds. Just long enough to heat up the tomatoes, but not long enough to blacken the filling.
