Starbucks only has these during the Christmas holiday and of course I wanted one after the holiday so I decided to make it myself! Not bad!! Give it a try!! Goes great with a cup of coffee.. Enjoy! :) Ingredients:

1 c butter softened |
1 1/2 c light brown sugar, packed loosely |
3 eggs |
1 1/2 tsp pure vanilla extract |
1 tsp ground ginger |
1/4 tsp salt |
1 1/2 c flour |
3/4 c diced dried cranberries |
1/2 c chopped white chocolate |
frosting |
6 oz softened philadelphia cream cheese |
3 c powdered sugar |
1 1/2 tbsp fresh lemon juice |
1/2 tsp pure vanilla extract |
1/4 c diced dried cranberries |
Directions:
1. Preheat oven to 350' 2. Cream butter and sugar until smooth 3. Add eggs, vanilla, sugar, & salt, beat with hand mixer until smooth 4. Gradually mix in flour and beat until smooth (will be thick) 5. Fold cranberries and white chocolate into batter 6. Pour batter into a well greased 9x13 pan 7. Bake for 35 to 40 mins or until the edges are slightly brown 8. Cool completely before frosting 9. Combine all ingredients for frosting and beat until smooth 10. When cake is cool, spread frosting with a spatula until evenly coated 11. Sprinkle remaining cranberries on top 12. Slice and enjoy! :) |
