Another great find in Simple and Delicious magazine in Jan 2009. A quick meal that is finished in 30 minutes and has a variety of flavors and texture.
Ingredients:
1 tablespoon olive oil
3 eggs, lightly beaten
1 teaspoon olive oil
3 (5 ounce) boneless sirloin steaks, cut into thin strips
2 1/2 cups coleslaw mix (green & red cabbage, carrots and broccoli mix)
1/2 lb fresh asparagus, trimmed and cut into 1 1/2-inch pieces
1/2 cup sweet onion, chopped
4 cups cold cooked rice
3 tablespoons butter, cubed
3 tablespoons soy sauce
1/8 teaspoon black pepper (or to taste)
Directions:
1. In a large skillet, heat 1 tbs of oil until hot. Add eggs, cook and stir over medium heat until completely set. Remove from pan and keep warm.
2. In the same pan, add the 1 tsp of oil and stir-fry the beef strips, coleslaw, asparagus and onion for 4-6 minutes or until veggies are crisp/tender.
3. Add rice and butter to pan, cook and stir over medium heat for 1-2 minutes or until heated through.
4. Add the cooked eggs, soy sauce and pepper and stir until well mixed and warmed.
