Another great find in Simple and Delicious magazine in Jan 2009. A quick meal that is finished in 30 minutes and has a variety of flavors and texture. Ingredients:
1 tablespoon olive oil |
3 eggs, lightly beaten |
1 teaspoon olive oil |
3 (5 ounce) boneless sirloin steaks, cut into thin strips |
2 1/2 cups coleslaw mix (green & red cabbage, carrots and broccoli mix) |
1/2 lb fresh asparagus, trimmed and cut into 1 1/2-inch pieces |
1/2 cup sweet onion, chopped |
4 cups cold cooked rice |
3 tablespoons butter, cubed |
3 tablespoons soy sauce |
1/8 teaspoon black pepper (or to taste) |
Directions:
1. In a large skillet, heat 1 tbs of oil until hot. Add eggs, cook and stir over medium heat until completely set. Remove from pan and keep warm. 2. In the same pan, add the 1 tsp of oil and stir-fry the beef strips, coleslaw, asparagus and onion for 4-6 minutes or until veggies are crisp/tender. 3. Add rice and butter to pan, cook and stir over medium heat for 1-2 minutes or until heated through. 4. Add the cooked eggs, soy sauce and pepper and stir until well mixed and warmed. |
