St. Vincent Sweet Potato Chips

These are good.
Ingredients:
1 lb sweet potato
vegetable oil
Directions:
1. Wash and peel potatoes.
2. Slice thinly.
3. Soak in cold salted water for 1 hour.
4. Drain and dry on paper towels.
5. Fry until browned in deep oil 370 degrees.
6. Drain on paper towels.
7. Salt and keep warm, till ready to serve.
