I love Irish Soda Bread. This is the second recipe for it I have put on this site. This one has fruit in it...as with the first one... toasted and honey put on it... you can't beat it...I got this out of a ladies magazine years ago. Ingredients:
2 cups all purpose flour |
3/4 teaspoon baking soda |
1/2 teaspoon salt |
1 tablespoon sugar |
6 tablespoons chilled solid vegetable shortening |
1 cup seedless dark raisins |
1 tablespoons caraway seeds |
3/4 cup buttermilk |
Directions:
1. In a large bowl, mix first 4 ingredients; cut shortening into flour mixture with pastry blender until course crumbs form. 2. Lightly stir in raisins and caraway seeds. 3. Add buttermilk; toss with fork until dry ingredients are just evenly moistened. 4. Knead dough 3 or 4 times; shape into round loaf. 5. Place on lightly greaded baking sheet. 6. Brush top with additional milk. 7. Score top of bread with a big x with a sharp knife. 8. Bake in preheated oven at 375 degrees for 45 to 50 minutes. |
