I saw something this past weekend about avocados & thought why not mash them together with the cauliflower. It is a fun light green color and very pleasing to the palette. I know it sounds weird, but it was very yummy. Ingredients:
cauliflower, 1 head |
garlic, 2-3 cloves |
avocado, 1 |
salt |
black pepper |
Directions:
1. Cut up cauliflower into small pieces & place in a pot of salted water & bring to a boil. 2. Slice garlic cloves directly into the pot. 3. Boil until the cauliflower is tender. 4. Drain the water & leave the pot on the stove so the extra liquid evaporates. 5. Chop the avocado & add it to the pot & mash. 6. Add S&P to taste. |
