This soup has a wonderful consistency and it is a must eat at my home during St. Martin's festivities. Ingredients:
10 oz chestnuts, boiled and peeled |
1 yellow onion, peeled and chopped |
10 oz potatoes, peeled and chopped |
2 garlic cloves |
5 cups water |
3 tbsp olive oil |
salt and pepper |
4 slices of parma ham, grilled or fried until crispy |
Directions:
1. In a big pan cook the potatoes, onion and garlic cloves in olive oil 2. Add the chestnuts (save some to decorate the soup plate). Cook for about 10 minutes and add the water. 3. Let it boil for about 20 minutes until the potatoes and onion are soft and tender. 4. Season with salt and pepper and puree the soup. 5. Serve the soup and decorate with the chopped chestnuts you saved before and with pieces of crisp parma ham. |
