I substitute spinach in this recipe, it calls for collard greens! Got this from a co-worker a few years ago. Great twist on an easy, one dish meal. Ingredients:
1 lb. penne or other medium pasta shape |
1/2 lb. bacon |
4 cloves garlic, chopped |
1 cup onion, chopped |
1 tsp. salt |
1 lb. collard greens, chopped and rinsed ( i use spinach) |
1 14.5 oz. can chicken broth |
1 tbsp. wine vinegar |
1 tsp. hot pepper sauce |
1/2 cup parmesan cheese, grated |
Directions:
1. Cook pasta according to pasta directions, drain. 2. Meanwhile, cook bacon in large skillet until crisp. 3. Remove from pan, crumble and reserve bacon. 4. Pour off all but 1 tbsp. bacon drippings. 5. Saute garlic and onion in remaining drippings. 6. Sprinkle with salt. 7. Add greens and stir to coat with bacon drippings. 8. Add chicken broth. 9. Cover pan and simmer until greens are tender but not mushy, about 15 minutes. 10. Stir in vinegar and hot pepper sauce. 11. Mix collard greens and pan juices with the cooked pasta. 12. Sprinkle with parmesan cheese and chopped bacon. 13. Serve immediately. |
