Squash Squares In Sour Cream |

From Better Homes and Garden Cookbook. Recipe serves 4 to 6. Ingredients:
4 cups cubed, pared butternut or hubbard squash |
1 medium onion, sliced |
2 tablespoons butter |
1 cup dairy sour cream |
1/2 teaspoon salt |
pepper |
1/2 teaspoon dillweed |
Directions:
1. Cook and drain 4 cups cubed, pared butternut or Hubbard squash. 2. Meanwhile, cook 1 medium onion, sliced, in 2 tablespoons butter till tender but not brown. 3. Remove from heat; add 1 cup dairy sour cream and 1/2 teaspoon salt; stir well. 4. Place hot cooked squash on platter; sprinkle with pepper; pour sauce over. 5. Sprinkle with 1/2 teaspoon dillweed. 6. Serves 4 to 6. |
