Ingredients:
2 teaspoons olive oil |
1 1/4 cups sliced onion (about 1 medium onion) |
1 cup red bell pepper strips |
3 garlic cloves, minced |
4 cups sliced yellow squash (about 1 pound) |
1 tablespoon chopped fresh or |
1 teaspoon dried basil |
1/2 teaspoon lemon pepper |
1/4 teaspoon salt |
2 tablespoons grated parmesan cheese |
Directions:
1. Heat oil in a large nonstick skillet over medium-high heat. Add onion, bell pepper, and garlic; cook, stirring constantly, 2 minutes. Add squash; cook, stirring constantly, 6 minutes or until vegetables are crisp-tender. Stir in basil, lemon pepper, and salt. Remove from heat, and sprinkle with Parmesan cheese. Serve immediately. |
