Squash & Potato Casserole |

Another one of my mom's delicious recipes. Ingredients:
1/2 onion, chopped |
2 tablespoons butter |
3 yellow squash |
3 small russet potatoes |
1/2 cup sour cream |
1 cup mild cheddar cheese, grated |
salt, to taste |
pepper, to taste |
1 cup ritz cracker, crushed |
2 tablespoons butter, melted |
Directions:
1. Preheat oven to 350. 2. Cut up squash and potatoes (into small chunks) and boil in water until tender. 3. Drain and set aside. 4. Saute onion in butter for 3-5 minutes and remove from pan. 5. Mix onion, sour crean, cheese, salt and pepper together. 6. Add potatoes and squash. 7. Pour into a 2 quart casserole dish. 8. Mix Ritz with melted butter and spread on the casserole. 9. Bake for 25 mintues. |
