My sister gave me this recipe, it's so good. I like to serve this with bread and cheese, and fruit for lunch. Ingredients:
5 cups peeled butternut squash |
4 cups chicken broth (vegetable broth can also be used) |
2 pears, peeled, cored and cut up |
1 cup diced onion |
1 tsp ginger |
1/2 tsp nutmeg |
1 tsp cinnamon |
salt & pepper |
Directions:
1. Combine all ingredients and simmer for approximately 25 minutes, or until tender. Puree. Season with salt & pepper. |
