Ingredients:
1/2 cup butter or margarine, softened |
3/4 cup firmly packed brown sugar |
1/4 cup molasses |
1 egg, beaten |
1 cup cooked, mashed squash |
1 3/4 cup all-purpose flour |
1 teaspoon baking soda |
1/4 teaspoon salt |
1/4 cup chopped pecans |
Directions:
1. Combine butter, sugar, and molasses, beating well. Add egg; beat well. Stir in squash. Combine flour, soda, and salt; add to squash mixture, mixing well. Stir in pecans. 2. Spoon batter into greased muffin pans, filling two-thirds full. Bake at 375° for 20 minutes. |
