This recipe is from The Mississippi Cookbook. Recipe submitted by Mrs. J.E. Richardson of Enterprise, MS. Ingredients:
1 cup squash, cooked |
1 cup flour |
1 egg |
1/2 cup milk |
2 teaspoons baking powder |
1/2 teaspoon salt |
pepper, to taste |
onion powder, to taste (or chopped onions) |
Directions:
1. Cook squash first. 2. Mix ingredients until just moistened. 3. Drop by spoonfuls (try an ice cream dipper) into fry daddy, deep fryer, or deep pot with oil. 4. Let cook until golden brown. 5. Drain. |
