This is delicious and is requested at holidays.It's also simple to make. There's never any leftovers. Give it a try. You won't be disappointed. Ingredients:
3 cups cooked squash, drained, with all the water squeezed out (i saute zucchini and yellow squash til soft and broken down; then wrap in a towel and squeeze out water) |
1 large onion |
4 tbsp butter |
1 cup ritz crackers (plusmore for topping) |
1/2 cup sour cream |
1/2 tsp garlic powder |
1/2 tsp salt |
black pepper, to taste |
1 cup grated sharp cheddar |
Directions:
1. Preheat oven to 350. 2. Saute onion in butter 5 minutes 3. Remove from pan and mix all ingredients together 4. Pour into buttered dish and top with additional cracker crumbs 5. Bake for 30 minutes |
