Squash and Sausage Stuffing |

Savory and hearty stuffing Ingredients:
8 ounces sweet italian sausage, crumbled with casings removed |
2 small onions, chopped |
2 celery ribs, chopped |
2 garlic cloves, crushed |
1/4 teaspoon sea salt |
1/4 teaspoon fresh cracked black pepper |
1 tablespoon chopped fresh thyme |
4 tablespoons butter |
1 loaf french bread, cut into 1/2-inch pieces |
3 cups frozen diced butternut squash |
2 1/2 cups chicken broth |
1 tablespoon chopped fresh parsley |
Directions:
1. Preheat oven to 350°F Coat 13x9 baking dish with cooking spray. 2. Coat large nonstick skillet with cooking spray. Heat over medium heat. Add sausage, onions, celery, garlic, salt and pepper. Cook, stirring occasionally, until sausage is no longer pink (10 mins). Remove from heat. Stir in thyme. 3. Melt 2 Tbs. butter. In large bowl, combine bread, squash, broth, sausage mixture and melted butter. Toss until liquid is absorbed. 4. Transfer to baking dish. Dot with remaining 2 Tbs butter. Cover. Bake for 40 minutes. 5. Uncover. Bake until hot (30 mins). Cool 10 minutes. Sprinkle with parsley. |
