This appealing soup makes use of some great summer vegetables, and adds some earthy tones with the kale Ingredients:
1 med onion, chopped |
2 cloves garlic, minced |
2 med zucchini, chopped |
2 med yellow squash, chopped |
3 med yukon gold potatoes, diced |
2 c kale, chopped |
6 cups water |
1 tsp salt |
1/2 tsp white pepper |
Directions:
1. Prepare the vegetables, and place everything but the kale in a large pot. 2. Bring to a boil, reduce heat and simmer until the potatoes are soft. 3. Using a blender (hand or standard), blend until smooth. 4. Add the kale, (about 1 bunch, stemmed and chopped). Simmer until soft. |
