Squash and Kale Soup

This appealing soup makes use of some great summer vegetables, and adds some earthy tones with the kale
Ingredients:
1 med onion, chopped
2 cloves garlic, minced
2 med zucchini, chopped
2 med yellow squash, chopped
3 med yukon gold potatoes, diced
2 c kale, chopped
6 cups water
1 tsp salt
1/2 tsp white pepper
Directions:
1. Prepare the vegetables, and place everything but the kale in a large pot.
2. Bring to a boil, reduce heat and simmer until the potatoes are soft.
3. Using a blender (hand or standard), blend until smooth.
4. Add the kale, (about 1 bunch, stemmed and chopped). Simmer until soft.
