Great bar cookie for anytime of the year. Enjoy! Ingredients:
1/2 cup powdered sugar |
1/2 cup shortening |
2 eggs, separated |
1 cup all-purpose flour |
1/2 cup ground almonds, if desired |
1 can (14oz) sweetened condensed milk |
1/4 cup lemon juice |
1 teaspoon vanilla |
1/2 cup chopped maraschino cherries, drained |
1/2 cup granulated sugar |
1/2 cup roasted diced almonds |
Directions:
1. Heat oven to 350 degrees F 2. Beat powdered sugar, shortening and egg yolks until blended 3. Stir in flour and ground almonds 4. Press in ungreased baking pan, 13x9x2 inches. 5. Bake 15 minutes 6. Beat milk, lemon juice & vanilla 7. Stir in cherries 8. Beat egg whites in small mixer bowl until foamy 9. Beat in granulated sugar, 1 tablespoon at a time; continue beating until stiff & glossy. Do not underbeat. 10. Spread cherry mixture over baked layer. 11. Carefully spread meringue over cherry mixture; sprinkle with diced almonds. 12. Bake 20 minutes 13.
