Spruce Gin Shrimp Cocktail |

This recipe uses six ingredients that are used in the Rogue Spruce Gin, as well as the gin itself! Serve this appetizer “up” in a cocktail glass for a fun presentation. The cocktail sauce can be made in advance and then added to the shrimp and other ingredients. Read more . This dish is fantastic paired with Rogue Half-e-Weizen or with Eugene City Brewery’s Honey Orange Wheat Ale. If you can’t find either of these, a Belgian-style Wit beer makes a nice substitute. Ingredients:
cocktail sauce |
1.5 cups ketchup |
3 each tangerines, juiced |
1 pinch grains of paradise |
1/2 tsp. finely minced or pureed ginger |
1/2 each lemon, juiced |
1/2 tsp. ground coriander |
1 fl oz. rogue spruce gin |
shrimp cocktails |
2.5 lbs. drained, cooked shrimp (rock shrimp or bay shrimp) |
1/2 lb. cucumbers, seeded and cut into small dice |
2 oz green onions, chopped |
Directions:
1. 1) For the sauce, combine all ingredients and mix well. 2. 2) Fold the sauce into the shrimp, cucumbers, and green onions. 3. 3) Divide into 8 servings. Garnish with peels or zest from the tangerine, lemon, and cucumber. |
