Sprout Slaw With Ginger Dressing |

A nice, light slaw for sprout lovers! Cooking time does not include chilling time. Ingredients:
1 cup bean sprouts |
1 cup alfalfa sprout |
1/2 cup carrot, shredded |
1/4 cup green onion, diagonally sliced |
1/4 cup bell pepper, diced |
1 1/2 teaspoons rice vinegar |
1 1/2 teaspoons water |
1 1/2 teaspoons olive oil |
1/2 teaspoon sesame oil |
1/2 teaspoon salt |
1/2 teaspoon brown sugar, firmly packed |
1/2 inch ginger, piece minced |
1 small garlic clove, minced |
1 dash pepper |
Directions:
1. In a medium bowl combine sprouts, carrots, onion and peppers; mix and set aside. 2. Combine the remaining ingredients in blender and process until well combined, scraping down the sides as needed. 3. Pour over sprout mixture, tossing, and cover. 4. Refrigerate for a couple of hours. 5. Toss again before serving. |
