These are a pretty buttery Christmas cookie and one that I make to use up all the extra egg yolks. I usually make them in wreath shapes and decorate them with green and red candied cherries. The recipe is from Baking Easy and Elegant. Ingredients:
1 3/4 cups unsalted butter |
1 1/2 cups sugar |
4 egg yolks |
2 teasp. vanilla |
1 tbsp. finely grated lemon or orange peel ( i use lemon) |
food coloring optional..( i don't usually use it) |
4 cups flour ( i substitute 1/2 cup of pastry flour for 1/2 cup reg. flour) |
1 1/2 teasp. baking powder |
Directions:
1. beat butter, sugar, egg yolks, vanilla, lemon peel until creamy 2. stir flour and baking powder into the butter mixture 1 cup at a time 3. beat well after each cup 4. pack dough into a cookie press using your choice of plates. 5. press out 1'' apart on an ungreased baking sheet 6. bake at 350' for 12-15 mins or until they just start to turn light golden 7. If decorating with candied fruit or small candies do before baking 8. to make wreaths: use the star plate. hold the press in a horizonal position.. I decorate the top of the wreath with a 1/2 red cherry and then cut a green cherry in 1/4th and put 1 piece on each side of the red cherry |
