Springtime Vegetable Frittata |

Great with garlic toast and fresh fruit compote! Ingredients:
4 eggs |
4 oz ricotta |
2 spring onions, sliced |
1 tomato, chopped |
1/2 x 14 oz can of asparagus |
1/2 red, green or yellow bell pepper, chopped |
3- 4 tblsp milk to lighten mixture |
1/4 tsp ground chili powder - optional |
olive oil or butter or cooking spray |
optionals - you can add any type vegetable you like to this dish. |
Directions:
1. Combine eggs, milk, ricotta, chopped spring onions, tomatoes, canned asparagus and bell pepper. 2. Pour into a frying pan, lightly oiled or buttered or sprayed and cook gently until well set. 3. Serve with a salad, and crust bread, or fruit compote and croissant. |
