Blend fresh strawberries and apple juice to get the base for this fruity chilled summer soup. Ready in less than 30 minutes, this refreshing side dish will become a summertime favorite. Ingredients:
5 cups sliced fresh strawberries (2 quarts) |
1/2 cup unsweetened apple juice |
2 cups nonfat buttermilk |
1/4 cup dry red wine |
1/4 cup sifted powdered sugar |
1/4 teaspoon ground cinnamon |
1/4 cup plus 2 tablespoons low-fat vanilla yogurt |
strawberry blossoms (optional) |
Directions:
1. Place strawberries and apple juice in container of an electric blender; cover and process until smooth. Transfer to a bowl. Add buttermilk and next 3 ingredients; stir well. Cover and chill at least 2 hours. Ladle into bowls; top each with 1 tablespoon yogurt, swirling if desired. Garnish with strawberry blossoms, if desired. |
