I am not a creamy-based salad/any food person AT ALL (I don't like mayo) but I threw this together last night and it was good and will make again. Plus, it's healthier with plain yogurt! Ingredients:
2 chicken breasts |
1/4 cup - 1/3 cup of plain yogurt |
2 1/2 tbsp. of mayo (i used canola based) |
1/4 cup (or a little less) of lemon juice |
white onion |
1/3 cup cranberries |
1/2 cup red grapes |
big handful of pecans |
fresh dill |
2 tsp. thyme |
salt & pepper to taste |
spinach |
Directions:
1. Cook chicken to your liking 2. Mix all ingredients together and eat on top of spinach 3. Or eat it on rye bread with spinach |
