Spring Veggie Salad With Cheese

Crunchy young vegetables beaming with bright colors and flavor join refreshing farmer cheese to please the eye and the taste buds.
Ingredients:
2 small fresh pickling cucumbers with skin
6-8 medium red radishes
4-5 thin green scallions, both white and green parts
1 cup of farmer cheese
2-3 generous tbsp of fresh chopped dill
salt to taste
sour cream or plain yogurt 1/3 cup or more if you like
Directions:
1. Slice all vegetables in as uniform way as possible
2. Chop dill and scallions
3. Toss everything in a salad bowl.
4. Add cheese and sour cream
5. Add salt to taste
6. Mix well, taking care not to mash the veggies
7. Enjoy by itself or on a slice of fresh toasted sourdough bread
