This is an onion soup with a bit of attitude. Spring onions and greens are the first things to appear in the spring so I named this Spring Soup. Also in the Spring I'm conscious of having to lose a few pounds and this is a very low-cal soup. Ingredients:
yields 8 cups |
2 tbsp margerine |
2 cups onion, thinly slice |
2 stalks celery, finely diced |
2 cloves garlic, minced |
4 14oz cans chicken broth |
1/4 cup worstershire |
1 cups water |
1 cup white wine |
2 cups spinach, fresh chopped |
Directions:
1. Heat margerine in soup pot 2. saute onion, celery and garlice until soft 3. Pour in broth, worstershire, water and wine 4. Bring soup up to a boil and add spinach. 5. Reduce heat and let simmer for about 30 - 45minutes. Would do just as well in a crockpot. |
