This is a delicious salad with the saltiness of the nuts and the creaminess of the cheese giving it something special Cooking light
Ingredients:
salad
1/4 c dry roasted pistachios,shelled and finely chopped
1/2 c (4oz) goat cheese
1 50z pkg spirng lettuce mix
1 c seedless red grapes,halved
1/4 tsp fresh ground black pepper
easy herb vinaigrette
9 tbs white wine vinegar
1-1/2 tbs wildflower honey
1/2 tsp sea salt
1 c canola oil
3 tbs fresh chopped basil
3 tbs fresh minced chives
Directions:
1. Place pistachios in shallow dish. Divide cheese into 12 equal portions,rolling to for 12 balls. Roll each in pistachios until well coated. Set pistachio-crusred cheese balls aside.
2. Combine Easy Herb Vinaigrette and greens in large mixing bowl and toss gently to coat evenly. Divide greens mixture evenly among 4 salad plates. Top each with 1/4 c grapes and 3 cheese balls. Sprinkle salad with pepper and serve.
3. Easy Herb Vinaigrette:Combine first 3 ingredients in a medium bowl;slowly whisk in oil until combined. Stir in basil and chives. Store,covered,in refrigerator for up to 5 days.
