This is a delicious salad with the saltiness of the nuts and the creaminess of the cheese giving it something special Cooking light Ingredients:
salad |
1/4 c dry roasted pistachios,shelled and finely chopped |
1/2 c (4oz) goat cheese |
1 50z pkg spirng lettuce mix |
1 c seedless red grapes,halved |
1/4 tsp fresh ground black pepper |
easy herb vinaigrette |
9 tbs white wine vinegar |
1-1/2 tbs wildflower honey |
1/2 tsp sea salt |
1 c canola oil |
3 tbs fresh chopped basil |
3 tbs fresh minced chives |
Directions:
1. Place pistachios in shallow dish. Divide cheese into 12 equal portions,rolling to for 12 balls. Roll each in pistachios until well coated. Set pistachio-crusred cheese balls aside. 2. Combine Easy Herb Vinaigrette and greens in large mixing bowl and toss gently to coat evenly. Divide greens mixture evenly among 4 salad plates. Top each with 1/4 c grapes and 3 cheese balls. Sprinkle salad with pepper and serve. 3. Easy Herb Vinaigrette:Combine first 3 ingredients in a medium bowl;slowly whisk in oil until combined. Stir in basil and chives. Store,covered,in refrigerator for up to 5 days. |
