Mixed salad greens, walnuts, raspberries, dates, and goat cheese in a raspberry-balsamic vinaigrette. Ingredients:
1/2 cup walnuts, coarsely chopped |
2 tablespoons sugar |
5 ounces mixed salad greens |
12 ounces fresh raspberries (2 cups) |
1/2 cup red onion, sliced thin (about 1/2 small onion) |
1/2 cup dates, chopped |
1/4 cup olive oil |
2 tablespoons balsamic vinegar |
1 teaspoon dijon mustard |
salt & freshly ground black pepper |
2 ounces goat cheese, crumbled |
Directions:
1. Heat a small skillet over low heat and cook walnuts and sugar, stirring constantly, until sugar melts and walnuts are coated, about 10 minutes; let cool, break apart, and set aside. 2. Meanwhile, in a large bowl, combine salad greens, fresh raspberries, onion, and dates. 3. Whisk together olive oil, balsamic vinegar, Dijon mustard, salt and pepper to taste. 4. Just before serving pour dressing over salad and gently toss; garnish with cheese and walnuts. |
