Spring Onion And Potato Cutlets |

A simple recipe to use as a side dish.Would be great alongside rice dishes.I like to use this as a stuffing in spring rolls/samosa which goes well with Mint chutney and Tomato Ketchup. Ingredients:
500 gm potatoes |
1/2 cup green part of spring onions,chopped |
1/2 tbsp salt (or to taste) |
1 tbsp red chillies powder |
1/2 tbsp cumin seeds |
pinch of nigella seeds (kalonji) |
2 tbsp dried pomegranate seeds,optional |
1 tbsp crushed coriander |
fresh coriander leaves,chopped |
1-2 eggs |
bread crumbs as required |
oil, for shallow-frying |
Directions:
1. Boil,peel and mash potatoes. 2. Add all ingredients except egg,crumbs and oil.Mix well. 3. Make round/cylinder shaped cutlets,dip in beaten eggs and crumbs. 4. Heat oil in a pan for shallow-frying. 5. Place cutlets in oil and fry till both sides are crisp and golden brown. 6. Serve hot with ketchup/chutney. |
