Spring Berry Champagne Cocktail |

Sliced strawberries infuse raspberry brandy with fresh berry flavor, and the strained liqueur is topped off with Champagne. Ingredients:
1/2 cup brandy |
4 1/2 tablespoons sugar |
3 tablespoons framboise eau-de-vie (clear raspberry brandy) |
15 strawberries, hulled |
1 750-ml bottle chilled brut champagne |
Directions:
1. Stir brandy, sugar, and framboise in medium bowl. Slice 9 strawberries; add to brandy mixture. Let stand 1 hour at room temperature, then strain. (Can be prepared 1 day ahead. Cover; chill brandy mixture and remaining 6 strawberries separately.) 2. Divide brandy mixture among 6 Champagne glasses. Add 1 strawberry to each glass. Fill with Champagne; serve. 3. *Available at liquor stores and some specialty foods stores. |
