Ingredients:
1 1/2 cups white or yellow cornmeal
3/4 cup self-rising flour
2 teaspoons baking powder
1 1/2 teaspoons salt
1 1/2 cups buttermilk
1 large egg
vegetable oil
Directions:
1. Beat first 6 ingredients at medium speed with an electric mixer until smooth.
2. Pour oil to a depth of 3 inches into a Dutch oven; heat to 375°. Drop batter by tablespoonfuls into oil, and fry, in batches, 3 minutes on each side or until golden. Drain on paper towels; serve immediately.
