Ingredients:
1 1/2 cups white or yellow cornmeal |
3/4 cup self-rising flour |
2 teaspoons baking powder |
1 1/2 teaspoons salt |
1 1/2 cups buttermilk |
1 large egg |
vegetable oil |
Directions:
1. Beat first 6 ingredients at medium speed with an electric mixer until smooth. 2. Pour oil to a depth of 3 inches into a Dutch oven; heat to 375°. Drop batter by tablespoonfuls into oil, and fry, in batches, 3 minutes on each side or until golden. Drain on paper towels; serve immediately. |
