Almost like a pudding - called spoon bread because you have to serve it with a spoon. Ingredients:
1 c. white cornmeal |
1 c. boiling water |
4 t. butter |
1 t. salt |
1 egg, beaten |
1 c. half-and-half ( rich milk in the original) |
1 1/2 t. baking powder |
Directions:
1. Preheat the oven to 375. 2. Pour the boiling water over the cornmeal and let sit for five minutes. Mix in the butter, salt, egg, baking powder, and half-and-half. Pour into a buttered pan and bake for 40 minutes, until golden brown on top. Serve immediately. |
