This recipe is from my CSA. It is super yummy and fun... Ingredients:
2 small sugar pumpkin |
1 (10 1/2 ounce) can cream of chicken soup |
10 1/2 ounces half-and-half (1 soup can) |
1/2 cup long grain rice |
1 medium onion |
1 garlic clove |
salt and pepper |
Directions:
1. Hollow out pumpkins. 2. Dice and brown onion and garlic. 3. Mix soup, half & half, rice, onion and garlic. Divide evenly between pumpkins. 4. Bake at 300 degress for 2 hours. 5. Serve in pumpkin. Scoop pumpkin meat in each bite. |
