Split Yellow Peas With Spring Onion

A slow burn side dish, I quite like this in a tortilla as a wrap or on a jacket potato.
Ingredients:
100 g yellow split peas
300 ml water
1/4 teaspoon turmeric
1 tablespoon olive oil
1 tablespoon lemon juice
1 spring onion, trimmed and chopped
Directions:
1. Place the peas, water and turmeric in a pan and bring to the boil.
2. Cover and simmer for 25 minutes.
3. Stir in the oil, juice and spring onions and serve.
