Split Yellow Peas With Spring Onion |

A slow burn side dish, I quite like this in a tortilla as a wrap or on a jacket potato. Ingredients:
100 g yellow split peas |
300 ml water |
1/4 teaspoon turmeric |
1 tablespoon olive oil |
1 tablespoon lemon juice |
1 spring onion, trimmed and chopped |
Directions:
1. Place the peas, water and turmeric in a pan and bring to the boil. 2. Cover and simmer for 25 minutes. 3. Stir in the oil, juice and spring onions and serve. |
