This is a really simple soup that tastes great, is healthy and is quite filling. You need to add liquid to it once it's refrigerated as it becomes really quite thick. I sometimes just leave it as is and just heat up and munch away. Ingredients:
1/2 cup dried yellow split peas |
1 onion, diced |
2 stalks celery, diced |
1 carrot, peeled and diced |
4 slices of bacon, diced |
4 cups of chicken broth |
pepper and salt |
Directions:
1. Cook bacon for 2-3 minutes over medium heat in dutch oven. 2. Add mier poix (onions, celery and carrots). Cook until soft, about 6-8 minutes. 3. Add split peas and cook for 2 minutes. 4. Add chicken stock. Bring to boil and reduce heat to medium/low. 5. Cook for about 35-40 minutes. Peas will melt down and dissolve into soup. 6. For finer consistency, zip with hand blender. |
