Great on a cold winter night! Turkey Sausage can be swapped with your favorite meat. Ingredients:
1 lb turkey sausage |
1 medium onion, chopped |
1 carrot, chopped |
1 celery rib, chopped |
4 red potatoes, chopped |
4 garlic cloves, minced |
1/2 tablespoon salt |
1 tablespoon pepper |
16 ounces dried split peas |
7 cups water |
2 cups chicken broth |
red pepper flakes |
Directions:
1. Begin sauteeing sausage in little bit of oil, until browned over medium high heat. 2. Add onion, carrot, celery, potatoes, and garlic. 3. Cook about 5 minutes or until ingredients begin to soften. 4. Combine split peas, water, and broth and bring to boil. 5. Simmer covered for 1 1/2 hours. 6. Uncover and cook for about 30 minutes or until soup slightly thickens. |
