A rich hearty soup of split peas and ham. Perfect for a cold winter day. Ingredients:
1 lb dried split peas |
1 ham hock (two if they don't look like they have much meat) |
2/3 cup coarsely chopped onion |
1/4 cup chopped carrot |
1/2 cup chopped celery |
2 parsley sprigs |
2 cloves garlic |
1 bay leaf |
1/2 teaspoon sugar |
1/4 teaspoon salt |
1/8 teaspoon dried thyme |
1/8 teaspoon pepper |
1 dried hot chile |
2 cans (14 oz ) chicken broth |
Directions:
1. In a large pot combine peas and 1 qt of water; bring to boiling. Reduce heat and simmer covered for 45 minutes. Add water if necessary. 2. Add all the rest of the ingredients. Simmer covered for 1 1/2 hours or until everything breaks up. 3. Remove ham hocks and cut the meat off of them 4. Return to kettle and reheat. 5. I like to eat this with a couple of slices of crusty bread and a bottle of Tabasco or similar hot sauce. |
