Easy to make, healthy and just delicious! Ingredients:
1 (1 lb) package dried split peas |
1 cup diced carrot |
1 cup finely chopped onion |
1/2 cup pealed diced parsnip |
1/2 cup chopped celery |
1 teaspoon dried thyme |
1 teaspoon sugar |
1/2 teaspoon salt |
1/2 teaspoon pepper |
5 1/2 cups chicken broth |
3 cups water |
2 lbs smoked ham hocks |
1 teaspoon curry |
Directions:
1. Combine peas, carrotts, onion, parsnip, celery, thyme, salt, pepper, broth and the water. Add Ham Hocks, submerging them in mixture. 2. Cover, cook on low heat setting for 2 hours until peas are very soft. 3. Remove ham hocks; skim fat from surface of soup. Trim fat from hocks. Cut meat from bones and shread; stir into soup. Ladle into 6 bowls. Garnish each serving with garlic croutons and chopped parsley. |
