Ingredients:
2 carrots, sliced |
1 onion, diced |
2 stalks celery, diced |
1 (16 ounce) bag dried split peas |
1 bay leaf |
3 garlic cloves, minced |
5 cups chicken broth (more if needed while cooking) |
4 tablespoons extra virgin olive oil |
salt and pepper |
Directions:
1. Slice and saute all the vegetales in the olive oil in a large pot. 2. Check through the split peas for pebbles and remove. 3. Add split peas to the vegetables and saute for 3 minutes. 4. Add bay leaf and the water. 5. Simmer for about 2 1/2 hours until peas are soft. 6. Adjust seasonings. |
