A hearty soup for a cold day. If you drop the ham to make it vegetarian, try subsituting broth for flavor. Try this with grilled cheese sandwiches or crusty bread.
Ingredients:
8 cups cold water
1 lb split peas
1 cup carrot, diced
1 cup celery, diced
1 cup onion, chopped
2 cloves garlic, minced
1 cup ham, diced
Directions:
1. In a large pot, combine the water and the peas. Bring to a boil, then allow to simmer for one hour.
2. Toss in the carrots, celery, onion, ham, and a bouquet garni. Simmer until the peas are tender, another hour or so. Season with salt and extra ground black pepper. For a thick soup, allow it to simmer to the desired consistency.
3. Stir before serving. Ladel into warmed bowls. If desired, garnish with croutons.
